  • 8 pieces Corn Tortillas Soft corn tortillas are traditional.

  • 1/2 cup Radishes Thinly sliced for crunch.

Instructions

  • In a small bowl, whisk together the olive oil, lime juice, garlic powder, chili powder, salt, and pepper.
  • Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for 15-30 minutes.
  • Preheat your grill to medium-high heat.
  • Grill the salmon fillets skin-side down for 4-5 minutes per side until cooked through.
  • While the salmon rests, prepare your toppings: slice the red cabbage, avocado, and radishes, and chop the cilantro.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • Flake the grilled salmon into large pieces and place them on the warmed tortillas. Top with red cabbage, avocado, radishes, and cilantro.
  • Serve immediately with extra lime wedges on the side.
