Ingredients

Chicken

Instructions

  • Start by preparing the chicken. Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1 inch.
  • In a small bowl, mix together the salt, black pepper, and olive oil. Rub this mixture generously over both sides of each chicken breast. Allow the chicken to marinate for at least 15 minutes at room temperature.
  • While the chicken is marinating, preheat your grill to medium-high heat, around 375°F to 400°F.
  • Once the grill is hot, place the chicken breasts on the grill grates. Cook for about 6-7 minutes on one side without moving them.
  • After 6-7 minutes, flip the chicken breasts and immediately place slices of fresh mozzarella cheese on top of each piece. Close the grill lid and continue cooking for another 5-6 minutes, or until the chicken is cooked through and the cheese is melted.
  • While the chicken is finishing on the grill, slice the tomatoes into thick rounds and chop the fresh basil leaves.
  • Once the chicken is fully cooked, carefully remove it from the grill and let it rest for a few minutes.
  • To assemble, place each grilled chicken breast on a serving plate. Top with slices of fresh tomato and a generous sprinkle of fresh basil leaves. Drizzle the balsamic glaze over the top.
