Instructions
Start by preparing the chicken. Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1 inch.
In a small bowl, mix together the salt, black pepper, and olive oil. Rub this mixture generously over both sides of each chicken breast. Allow the chicken to marinate for at least 15 minutes at room temperature.
While the chicken is marinating, preheat your grill to medium-high heat, around 375°F to 400°F.
Once the grill is hot, place the chicken breasts on the grill grates. Cook for about 6-7 minutes on one side without moving them.
