Untreated cedar plank, soaked in water for at least an hour.

Extra virgin olive oil for coating the salmon.

Instructions
Soak the cedar plank in water for at least one hour.
Pat the salmon fillets dry with paper towels.
In a small bowl, combine olive oil, salt, and pepper.
Coat the salmon fillets evenly with the olive oil mixture.
Remove the cedar plank from the water and pat it dry. Heat the plank on the grill for about 5 minutes.
Place the seasoned salmon fillets skin-side down on the heated plank.
Squeeze lemon juice over the salmon fillets.
Close the grill lid and cook the salmon for 15-20 minutes.
Sprinkle chopped fresh herbs over the salmon during the last few minutes of cooking.
Remove the cedar plank from the grill and let the salmon rest for a couple of minutes before serving.
Serve the salmon directly from the plank.
Notes
For variations, consider adding a honey-Dijon glaze or using different herbs.
