  • 8 ounces Pasta Choose your favorite type such as penne, fusilli, or spaghetti.
  • 2 tablespoons Olive Oil Extra virgin olive oil for sautéing.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 4 cups Vegetable Broth The base of the golden broth.
  • 15 ounces Beans One can of your choice, rinsed and drained.
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • Salt and Pepper To taste.
  • 1 handful Fresh Parsley Chopped, for garnish.

Instructions

  • Prepare your ingredients: measure out the pasta, chop the onion and garlic, and rinse the beans.
  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and cook for an additional 1-2 minutes, stirring constantly.
  • Pour in vegetable broth and bring to a gentle boil.
  • Add the pasta and cook according to package instructions, usually around 8-10 minutes.
  • After the pasta is cooked, add the rinsed beans and heat through for about 3-5 minutes.
  • Season with dried thyme, oregano, salt, and pepper. Adjust seasoning as needed.
  • Remove from heat and ladle into bowls. Garnish with fresh parsley.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove.
