Instructions
Prepare your ingredients: measure out the pasta, chop the onion and garlic, and rinse the beans.
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
Add minced garlic and cook for an additional 1-2 minutes, stirring constantly.
Pour in vegetable broth and bring to a gentle boil.
Add the pasta and cook according to package instructions, usually around 8-10 minutes.
After the pasta is cooked, add the rinsed beans and heat through for about 3-5 minutes.
Season with dried thyme, oregano, salt, and pepper. Adjust seasoning as needed.
Remove from heat and ladle into bowls. Garnish with fresh parsley.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove.
