Instructions
Preheat your oven to 425°F (220°C).
Wash and peel the sweet potatoes, then cut them into even cubes, approximately 1-inch in size.
In a large mixing bowl, add the cubed sweet potatoes and drizzle with olive oil. Toss until evenly coated.
Sprinkle with salt and pepper, add minced garlic, and toss again to distribute the seasonings.
Sprinkle Parmesan cheese over the sweet potatoes and toss gently to ensure adherence.
Line a baking sheet with parchment paper and spread the sweet potato mixture in a single layer.
Roast in the oven for about 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
Remove from the oven and garnish with chopped parsley if desired. Serve immediately.
