  • 2 pounds Sweet Potatoes Peeled and cubed into bite-sized pieces.
  • 4-5 cloves Garlic Minced finely.
  • ¾ cup Parmesan Cheese Freshly grated.
  • 3 tablespoons Olive Oil Extra virgin olive oil for roasting.
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley Chopped, for garnish (optional).

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes, then cut them into even cubes, approximately 1-inch in size.
  • In a large mixing bowl, add the cubed sweet potatoes and drizzle with olive oil. Toss until evenly coated.
  • Sprinkle with salt and pepper, add minced garlic, and toss again to distribute the seasonings.
  • Sprinkle Parmesan cheese over the sweet potatoes and toss gently to ensure adherence.
  • Line a baking sheet with parchment paper and spread the sweet potato mixture in a single layer.
  • Roast in the oven for about 25-30 minutes, stirring halfway through, until golden-brown and fork-tender.
  • Remove from the oven and garnish with chopped parsley if desired. Serve immediately.
