Instructions
Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped onion, sauté for 3-4 minutes until translucent.
Add diced tomatoes to the skillet, stir well, and cook for 5-7 minutes until the sauce thickens.
Introduce soaked saffron and vegetable broth to the tomato mixture. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
In a separate pot, boil salted water and cook orzo according to package instructions (8-10 minutes). Drain and set aside.
Add king prawns to the sauce, cook for 4-5 minutes until they turn pink and opaque.
Stir in the drained orzo, mixing until evenly coated. Adjust seasoning with salt and pepper.
Garnish with chopped parsley and serve warm.
