Instructions

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped onion, sauté for 3-4 minutes until translucent.
  • Add diced tomatoes to the skillet, stir well, and cook for 5-7 minutes until the sauce thickens.
  • Introduce soaked saffron and vegetable broth to the tomato mixture. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  • In a separate pot, boil salted water and cook orzo according to package instructions (8-10 minutes). Drain and set aside.
  • Add king prawns to the sauce, cook for 4-5 minutes until they turn pink and opaque.
  • Stir in the drained orzo, mixing until evenly coated. Adjust seasoning with salt and pepper.
  • Garnish with chopped parsley and serve warm.

For variations, consider adding lemon juice, spinach, or red pepper flakes for extra flavor.
