  • 1 pound Steak (sirloin or ribeye) Grilled to desired doneness and sliced thin.
  • 14 ounces Artichoke Hearts Canned, drained, and rinsed.
  • 4 cups Mixed Greens Such as arugula, spinach, and romaine.
  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Cucumber Sliced thin.
  • 0.5 small Red Onion Thinly sliced.
  • 4 ounces Blue Cheese Crumbled.
  • 0.25 cup Olive Oil High-quality extra virgin.
  • 2 tablespoons Red Wine Vinegar
  • to taste Salt
  • to taste Pepper

Instructions

  • Season the steak with salt and pepper. Preheat the grill over high heat and grill the steak for 4-5 minutes on each side for medium-rare. Remove and let rest for 5 minutes before slicing.
  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently.
  • Add the drained artichoke hearts to the salad and fold them in gently.
  • In a separate bowl, whisk together blue cheese, olive oil, red wine vinegar, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Top the salad with sliced steak and garnish with additional blue cheese if desired. Serve immediately.
