Ingredients

Pasta

  • 8 ounces Pasta (spaghetti or fettuccine) Cooked according to package instructions until al dente.

Asparagus

  • 1 pound Fresh Asparagus Trimmed and cut into bite-sized pieces.

Lemon

  • 1 medium Lemon Zest and juice required.

Olive Oil

  • 3 tablespoons Extra Virgin Olive Oil For sautéing the asparagus.

Garlic

Parmesan Cheese

  • ½ cup Freshly Grated Parmesan Cheese For serving.

Salt and Pepper

Instructions

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Stir occasionally.
  • 2. Rinse the asparagus under cold water, trim the woody ends, and cut into 1-2 inch pieces.
  • 3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • 4. Add the asparagus to the skillet and sauté for 4-5 minutes until bright green and tender yet crisp.
  • 5. Zest the lemon and set the zest aside.
  • 6. Reserve ½ cup of pasta water, then drain the pasta. Do not rinse.
  • 7. Add the drained pasta to the skillet with the asparagus and toss gently to combine.
  • 8. Add the lemon zest and juice, along with ¼ cup of reserved pasta water. Toss to coat the pasta.
  • 9. Season with salt and pepper to taste.
  • 10. Remove from heat and sprinkle with Parmesan cheese. Toss gently to combine.
  • 11. Serve immediately, garnished with additional lemon zest or Parmesan if desired.

Notes

For variations, consider adding grilled chicken, different vegetables, or a splash of cream for a richer sauce.
