Instructions

  • Begin by gathering your ingredients. Ensure you have all-purpose flour, eggs, salt, and olive oil ready for use.
  • On a clean work surface, make a mound with the flour. Create a well in the center of the flour mound.
  • Crack the eggs into the well, adding the salt and olive oil. Using a fork, gently beat the eggs while gradually incorporating the flour from the edges of the well.
  • Once the mixture starts to come together, use your hands to knead the dough. Knead for about 8-10 minutes until you achieve a smooth and elastic texture.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  • After resting, divide the dough into four equal pieces. Keep the pieces covered with a damp cloth to prevent drying out.
  • Take one piece of dough and flatten it slightly with your hands. Dust your work surface with flour to prevent sticking.
  • Using a rolling pin or pasta machine, roll out the dough to your desired thickness.
  • Once rolled out, use a sharp knife or a pasta cutter to slice the dough into your preferred pasta shape.
  • Dust the cut pasta with a little flour and set it aside while you prepare the remaining pieces.
  • Bring a large pot of salted water to a rolling boil. Add the fresh pasta and cook for 2-4 minutes, depending on the thickness.
  • Taste the pasta to ensure it reaches your desired level of doneness.
  • Once cooked, drain the pasta and reserve a bit of the cooking water to help adjust the consistency of your sauce.
  • Combine the pasta with your favorite sauce, tossing gently to coat. Serve immediately.
