Ingredients

Protein

  • 1 pound Boneless Skinless Chicken Breasts Lean and cooks quickly.

Dressing

  • 2-3 limes Lime Juice Freshly squeezed for best flavor.
  • 1-2 teaspoons Chili Powder Adjust based on desired spice level.
  • 2 tablespoons Olive Oil Extra virgin preferred.
  • 2 cloves Garlic Minced for flavor.

Vegetables

  • 1 cup Bell Peppers Diced, any color.
  • 0.5 medium Red Onion Thinly sliced.
  • 0.25 cup Cilantro Roughly chopped.

Seasonings

  • Salt To taste.
  • Pepper To taste.

Instructions

  • Season chicken with salt, pepper, and 1 teaspoon of chili powder. Marinate for at least 15 minutes.
  • Prepare the dressing by combining lime juice, minced garlic, olive oil, and remaining chili powder. Whisk until combined.
  • Heat grill pan or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes on each side until cooked through.
  • Remove chicken from heat and let it rest for a few minutes before slicing.
  • Chop vegetables and place in a mixing bowl with chopped cilantro.
  • Add sliced chicken to the mixing bowl and pour dressing over the mixture. Toss gently to combine.
  • Taste and adjust seasonings as needed. Serve immediately or refrigerate for 30 minutes to meld flavors.

Notes

For variations, consider adding black beans, shredded carrots, or diced mango for extra flavor and texture.
