Instructions
Season chicken with salt, pepper, and 1 teaspoon of chili powder. Marinate for at least 15 minutes.
Prepare the dressing by combining lime juice, minced garlic, olive oil, and remaining chili powder. Whisk until combined.
Heat grill pan or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes on each side until cooked through.
Remove chicken from heat and let it rest for a few minutes before slicing.
Chop vegetables and place in a mixing bowl with chopped cilantro.
Add sliced chicken to the mixing bowl and pour dressing over the mixture. Toss gently to combine.
Taste and adjust seasonings as needed. Serve immediately or refrigerate for 30 minutes to meld flavors.
Notes
For variations, consider adding black beans, shredded carrots, or diced mango for extra flavor and texture.
