Instructions
Wash the fresh broccoli thoroughly under cold running water. Shake off excess moisture and cut into small florets.
Rinse the apples, core them, and dice into small cubes, keeping the skin on.
Finely chop the red onion and add it to the mixing bowl with the apples.
Add sunflower seeds and dried cranberries to the mixing bowl.
In a separate bowl, mix Greek yogurt, honey, and lemon juice until smooth.
Season the dressing with salt and pepper to taste.
Pour the dressing over the salad mixture and gently toss to combine.
Let the salad sit for about 10 minutes before serving to allow flavors to meld.
Serve chilled or at room temperature, garnished with additional sunflower seeds if desired.
