  • 2 cups Fresh Broccoli Florets Chopped into bite-sized pieces.
  • 2 medium Apples Preferably Fuji or Honeycrisp, cored and diced.
  • 1/4 cup Red Onion Finely chopped.
  • 1/4 cup Sunflower Seeds Roasted, unsalted.
  • 1/4 cup Dried Cranberries Unsweetened for a healthier option.
  • 1/2 cup Plain Greek Yogurt For the dressing.
  • 1 tablespoon Honey To sweeten the dressing.
  • 1 tablespoon Lemon Juice Freshly squeezed.
  • Salt and Pepper To taste.

Instructions

  • Wash the fresh broccoli thoroughly under cold running water. Shake off excess moisture and cut into small florets.
  • Rinse the apples, core them, and dice into small cubes, keeping the skin on.
  • Finely chop the red onion and add it to the mixing bowl with the apples.
  • Add sunflower seeds and dried cranberries to the mixing bowl.
  • In a separate bowl, mix Greek yogurt, honey, and lemon juice until smooth.
  • Season the dressing with salt and pepper to taste.
  • Pour the dressing over the salad mixture and gently toss to combine.
  • Let the salad sit for about 10 minutes before serving to allow flavors to meld.
  • Serve chilled or at room temperature, garnished with additional sunflower seeds if desired.
