Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water, then drain.
2. Prepare the artichokes by trimming stems, removing tough leaves, and slicing them into wedges.
3. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
4. Add sliced artichokes to the skillet and cook for 5-7 minutes until tender and caramelized.
5. Add halved cherry tomatoes and cook for another 5 minutes until softened.
6. Toss in the cooked pasta, adding reserved pasta water as needed for desired consistency.
7. Squeeze lemon juice over the pasta and stir to combine.
8. Remove from heat and gently fold in crumbled feta cheese.
9. Season with salt and pepper to taste, then serve garnished with fresh basil.
