Ingredients

Pasta

  • 12 ounces Pasta (penne or farfalle) Cook until al dente.

Fresh Artichokes

  • 2 medium Fresh Artichokes Cleaned and sliced.

Cherry Tomatoes

  • 2 cups Cherry Tomatoes Halved.

Feta Cheese

  • 1 cup Feta Cheese Crumbled.

Olive Oil

  • 3 tablespoons Olive Oil Extra virgin for sautéing.

Garlic

  • 3 cloves Garlic Minced.

Lemon Juice

  • 2 tablespoons Lemon Juice Freshly squeezed.

Fresh Basil

  • 1 handful Fresh Basil For garnish.

Salt and Pepper

  • Salt To taste.
  • Black Pepper To taste.

Instructions

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water, then drain.
  • 2. Prepare the artichokes by trimming stems, removing tough leaves, and slicing them into wedges.
  • 3. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  • 4. Add sliced artichokes to the skillet and cook for 5-7 minutes until tender and caramelized.
  • 5. Add halved cherry tomatoes and cook for another 5 minutes until softened.
  • 6. Toss in the cooked pasta, adding reserved pasta water as needed for desired consistency.
  • 7. Squeeze lemon juice over the pasta and stir to combine.
  • 8. Remove from heat and gently fold in crumbled feta cheese.
  • 9. Season with salt and pepper to taste, then serve garnished with fresh basil.
