Ingredients

Vegetables

  • 2 medium Ripe Tomatoes Diced into bite-sized pieces.
  • 1 large Cucumber Peeled and diced.
  • 0.5 medium Red Onion Thinly sliced.
  • 1 medium Bell Pepper Preferably red or yellow, diced.

Cheese

  • 150 grams Feta Cheese Crumble into bite-sized pieces.

Olives

  • 1 handful Kalamata Olives Pitted and sliced.

Herbs

  • 1 small handful Fresh Parsley Chopped.

Dressing

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 medium Lemon Juice Freshly squeezed.

Seasoning

  • to taste Salt
  • to taste Pepper

Instructions

  • Wash all the fresh vegetables under cold running water.
  • Dice the tomatoes and place them in a large mixing bowl.
  • Peel and slice the cucumber, then add it to the bowl with the tomatoes.
  • Thinly slice the red onion and add it to the mixing bowl.
  • Dice the bell pepper and add it to the mixture.
  • Crumble the feta cheese and add it to the bowl.
  • Prepare the olives and distribute them throughout the salad mixture.
  • Chop the fresh parsley and sprinkle it over the salad.
  • Whisk together the olive oil and lemon juice in a small bowl.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Season with salt and pepper to taste, and stir once more.
  • Let the salad sit for about 10 minutes before serving.
  • Serve in a large bowl or individual plates, garnished with extra parsley or feta.

Notes

For variations, consider adding grilled chicken, chickpeas, or different types of cheese.
