Ingredients

Fish

Marinade

Base

  • 2 cups Cooked rice White or brown, as preferred.

Vegetables

  • 1 cup Chopped lettuce
  • 1 cup Sliced avocados

Toppings

  • 1/2 cup Greek yogurt For creaminess.

Instructions

  • In a medium bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
  • Cut fish fillets into bite-sized pieces and marinate for at least 15 minutes.
  • Cook rice according to package instructions and set aside.
  • Heat a non-stick skillet over medium-high heat and cook marinated fish for 3-4 minutes on each side until golden brown.
  • Prepare vegetables: dice tomatoes, chop lettuce, and slice avocados.
  • Assemble bowls starting with rice, then layer cooked fish, fresh vegetables, cilantro, and Greek yogurt.
  • Drizzle with hot sauce if desired and serve immediately.

Notes

Store leftovers separately in airtight containers for up to three days.
