Instructions
In a medium bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
Cut fish fillets into bite-sized pieces and marinate for at least 15 minutes.
Cook rice according to package instructions and set aside.
Heat a non-stick skillet over medium-high heat and cook marinated fish for 3-4 minutes on each side until golden brown.
Prepare vegetables: dice tomatoes, chop lettuce, and slice avocados.
Assemble bowls starting with rice, then layer cooked fish, fresh vegetables, cilantro, and Greek yogurt.
