For added flavor, scrape out seeds.
Instructions
Prepare the strawberries by rinsing and slicing them. Place in a mixing bowl.
Add a tablespoon of powdered sugar to the strawberries and toss gently. Set aside for 15-20 minutes.
In a large mixing bowl, pour in the cold heavy cream and whip on medium speed until it thickens.
Gradually add the remaining tablespoon of powdered sugar and whip until soft peaks form.
If using, fold in the vanilla bean seeds into the whipped cream.
Break the meringue nests into large pieces.
In a serving dish, layer the meringue pieces, followed by whipped cream, and then the macerated strawberries.
Repeat the layering until all ingredients are used, finishing with strawberries on top.
Serve immediately for the best texture.
Notes
Store components separately to maintain meringue's crunchiness. Assemble just before serving.
