Instructions
Heat olive oil in a large cast iron pan over medium heat until shimmering.
Add chopped onion and sauté for 5-7 minutes until translucent and golden.
Add minced garlic and sauté for an additional 1-2 minutes.
Incorporate chopped kale and cook for 3-4 minutes until it starts to wilt.
Add fresh spinach and stir, cooking for another 3 minutes until wilted.
Sprinkle in cumin and paprika, stirring to coat the greens.
Season with salt and pepper to taste.
Create four wells in the greens mixture and crack an egg into each well.
Cover the pan and cook for 5-7 minutes until the egg whites are set.
Remove the lid and sprinkle feta cheese over the top.
Finish with a squeeze of lemon juice and garnish with cilantro and parsley.
Serve hot and enjoy!
