Instructions
Gather all the ingredients and kitchen tools.
Drain and rinse the canned chickpeas under cold water.
Prepare the fresh spinach and parsley by washing and roughly chopping them.
In a food processor, combine the chickpeas, spinach, parsley, and garlic.
Add lemon juice and tahini to the mixture.
Pour in olive oil and add salt.
Add 2-3 tablespoons of water to achieve desired consistency.
Blend the mixture until smooth and creamy, scraping down the sides as necessary.
Taste and adjust seasoning if needed.
Transfer to a serving bowl and drizzle with olive oil.
Serve immediately with fresh vegetables, pita chips, or crackers.
Notes
Leftover hummus can be stored in an airtight container in the refrigerator for up to 5 days.
