  • 1 cup Fresh Spinach Washed and roughly chopped.
  • ½ cup Fresh Parsley Stems removed.
  • 1 clove Garlic Minced.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • ¼ cup Tahini Paste made from ground sesame seeds.
  • 2 tablespoons Olive Oil Extra virgin, plus more for drizzling.
  • ½ teaspoon Salt Or to taste.
  • 2-3 tablespoons Water As needed to adjust consistency.

Instructions

  • Gather all the ingredients and kitchen tools.
  • Drain and rinse the canned chickpeas under cold water.
  • Prepare the fresh spinach and parsley by washing and roughly chopping them.
  • In a food processor, combine the chickpeas, spinach, parsley, and garlic.
  • Add lemon juice and tahini to the mixture.
  • Pour in olive oil and add salt.
  • Add 2-3 tablespoons of water to achieve desired consistency.
  • Blend the mixture until smooth and creamy, scraping down the sides as necessary.
  • Taste and adjust seasoning if needed.
  • Transfer to a serving bowl and drizzle with olive oil.
  • Serve immediately with fresh vegetables, pita chips, or crackers.

Notes

Leftover hummus can be stored in an airtight container in the refrigerator for up to 5 days.
