Ingredients

Corn

  • 4 ears Corn on the cob Choose fresh corn for the best flavor.

Sauce

  • 1/2 cup Mayonnaise Regular or light mayonnaise can be used.
  • 1/4 cup Sour cream Adds creaminess and tang.
  • 1 unit Lime Juice and zest for freshness.
  • 1 teaspoon Chili powder Adjust based on heat preference.
  • 1/2 teaspoon Garlic powder Enhances overall flavor.
  • 1/2 cup Cotija cheese Crumbled, can substitute with feta.
  • 1/4 cup Fresh cilantro Chopped for garnish.
  • Salt and pepper To taste.

Instructions

  • Preheat your grill to medium-high heat.
  • Remove husks and silk from the corn, rinse, and pat dry.
  • Grill the corn for about 10-15 minutes, turning occasionally until tender and charred.
  • In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper. Mix until smooth.
  • Coat each ear of corn with the elotes sauce.
  • Sprinkle crumbled cotija cheese over the corn and garnish with cilantro.
  • Serve warm with lime wedges on the side.
