Instructions

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add diced onion and sauté for 3-4 minutes until translucent.
  • Incorporate diced bell pepper and cook for an additional 3-4 minutes.
  • Add minced garlic and cook for about 1 minute until fragrant.
  • Add ground turkey, breaking it apart, and cook for 5-7 minutes until no longer pink.
  • Mix in fresh cranberries and cook for 3-5 minutes until they burst.
  • Season with salt and pepper to taste.
  • In a separate saucepan, bring water to a gentle simmer for poaching eggs.
  • Poach eggs for 3-4 minutes until whites are set and yolks remain runny.
  • Remove poached eggs with a slotted spoon and drain on paper towels.
  • Serve turkey cranberry hash topped with a poached egg and garnish with parsley.

Notes

This dish can be served for brunch, lunch, or dinner. Store leftovers in an airtight container for up to 3 days.
