Instructions
Heat olive oil in a large skillet over medium heat until shimmering.
Add diced onion and sauté for 3-4 minutes until translucent.
Incorporate diced bell pepper and cook for an additional 3-4 minutes.
Add minced garlic and cook for about 1 minute until fragrant.
Add ground turkey, breaking it apart, and cook for 5-7 minutes until no longer pink.
Mix in fresh cranberries and cook for 3-5 minutes until they burst.
Season with salt and pepper to taste.
In a separate saucepan, bring water to a gentle simmer for poaching eggs.
Poach eggs for 3-4 minutes until whites are set and yolks remain runny.
Remove poached eggs with a slotted spoon and drain on paper towels.
Serve turkey cranberry hash topped with a poached egg and garnish with parsley.
