Instructions
Preheat your oven to 400°F (200°C).
Prepare a baking dish by lightly greasing it with olive oil.
In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
Place salmon fillets skin-side down in the baking dish and pour the marinade over them.
Slice one lemon into rounds and arrange on top of the salmon.
Bake for 15-20 minutes until the salmon is opaque and flakes easily with a fork.
Garnish with chopped herbs and serve with additional lemon wedges if desired.
Notes
For variations, consider adding capers, olives, or a dollop of Dijon mustard to the marinade.
