Instructions
Soak the dried beans overnight in plenty of water. The next day, drain and rinse them thoroughly.
In a large pot, add the soaked beans and cover with fresh water or vegetable broth. Bring to a boil, then reduce to a simmer and cook for 45 minutes to an hour until tender. Drain and set aside.
Preheat your oven to 350°F (175°C).
In a skillet, heat oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic and sauté for an additional minute until fragrant.
In a mixing bowl, combine the cooked beans, sautéed onion and garlic, brown sugar, ketchup, mustard, apple cider vinegar, and season with salt and pepper. Mix well.
Transfer the mixture to a baking dish and spread evenly. Cover tightly with aluminum foil.
Bake in the preheated oven for about 1 hour. Remove foil, stir gently, and bake uncovered for an additional 30 minutes.
Once done, let the beans cool for a few minutes before serving.
Serve warm as a side dish or main course.
