Ingredients

Beans

  • 2 cups Dried Beans (Navy, Pinto, or Kidney) Soaked overnight for optimal tenderness.

Onion

Water or Vegetable Broth

Instructions

  • Soak the dried beans overnight in plenty of water. The next day, drain and rinse them thoroughly.
  • In a large pot, add the soaked beans and cover with fresh water or vegetable broth. Bring to a boil, then reduce to a simmer and cook for 45 minutes to an hour until tender. Drain and set aside.
  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and sauté for an additional minute until fragrant.
  • In a mixing bowl, combine the cooked beans, sautéed onion and garlic, brown sugar, ketchup, mustard, apple cider vinegar, and season with salt and pepper. Mix well.
  • Transfer the mixture to a baking dish and spread evenly. Cover tightly with aluminum foil.
  • Bake in the preheated oven for about 1 hour. Remove foil, stir gently, and bake uncovered for an additional 30 minutes.
  • Once done, let the beans cool for a few minutes before serving.
  • Serve warm as a side dish or main course.

Notes

Consider adding smoked paprika for a smoky flavor or incorporating vegetables for added nutrition.
