Instructions
Prepare your ingredients by chopping parsley, basil, and mincing garlic.
In a large mixing bowl, combine ground turkey, parsley, basil, garlic, breadcrumbs, and beaten egg. Season with salt and pepper and mix gently.
Shape the mixture into meatballs about 1 to 1.5 inches in diameter.
Heat olive oil in a large pot over medium heat. Add meatballs in batches and sear until golden brown, about 3-4 minutes on each side.
Remove meatballs and set aside. Sauté any additional vegetables in the same pot for 3-5 minutes.
Pour in vegetable broth, scraping the bottom of the pot. Bring to a gentle simmer.
Return meatballs to the pot, cover, and cook for 20-25 minutes.
Stir in fresh spinach 5 minutes before serving and allow it to wilt.
Adjust seasoning of the broth with salt and pepper if necessary, then serve warm.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat gently.
