Ingredients

Meatball Ingredients

  • 1 lb Ground Turkey Lean protein for the meatballs.
  • 1/4 cup Fresh Parsley Finely chopped for flavor.
  • 1/4 cup Fresh Basil Chopped for aromatic flavor.
  • 4 cloves Garlic Minced for depth of flavor.
  • 1/2 cup Breadcrumbs Helps bind the meatballs.
  • 1 large Egg Beaten, acts as a binder.
  • 1 tsp Salt For seasoning.
  • 1/2 tsp Black Pepper For seasoning.

Cooking Ingredients

  • 2 tbsp Olive Oil For sautéing the meatballs.
  • 2 cups Vegetable Broth For simmering the meatballs.
  • 2 cups Fresh Spinach Added at the end for nutrition.

Instructions

  • Prepare your ingredients by chopping parsley, basil, and mincing garlic.
  • In a large mixing bowl, combine ground turkey, parsley, basil, garlic, breadcrumbs, and beaten egg. Season with salt and pepper and mix gently.
  • Shape the mixture into meatballs about 1 to 1.5 inches in diameter.
  • Heat olive oil in a large pot over medium heat. Add meatballs in batches and sear until golden brown, about 3-4 minutes on each side.
  • Remove meatballs and set aside. Sauté any additional vegetables in the same pot for 3-5 minutes.
  • Pour in vegetable broth, scraping the bottom of the pot. Bring to a gentle simmer.
  • Return meatballs to the pot, cover, and cook for 20-25 minutes.
  • Stir in fresh spinach 5 minutes before serving and allow it to wilt.
  • Adjust seasoning of the broth with salt and pepper if necessary, then serve warm.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently.
