Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
Add chopped onion and minced garlic, sauté until onion is translucent.
Incorporate mixed vegetables and cook for another 5 minutes.
Pour in chicken broth and add cream of mushroom soup, stir to combine.
Season with salt and pepper to taste.
Transfer the mixture to a greased baking dish and top with cheddar cheese and breadcrumbs.
Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
Let sit for 5-10 minutes before serving.
