Instructions
Heat olive oil in a large skillet or wok over medium-high heat.
Add ground beef, breaking it apart as it cooks. Sauté until browned, about 5-7 minutes, seasoning with salt, pepper, oregano, cumin, and paprika.
Drain excess fat if necessary. Add sliced red onion and sauté for 3-4 minutes until softened.
Add sliced bell peppers and zucchini, cooking for an additional 5-6 minutes until tender yet crisp.
During the last minute, add minced garlic and stir continuously until fragrant.
Remove from heat, squeeze lemon juice over the stir fry, and toss to combine.
Serve immediately, garnished with chopped parsley.
