Instructions
Prepare all ingredients: chop beef, dice vegetables, and mince garlic.
Heat olive oil in a large pot over medium-high heat. Sear beef until browned.
Remove beef and sauté onions until translucent, then add garlic.
Return beef to pot, add vegetables, broth, bay leaves, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
Adjust seasoning, remove bay leaves, and serve hot.
