Ingredients

Beef

  • 2 pounds Beef Chuck Roast Cut into 1-inch cubes.

Vegetables

  • 4 medium Carrots Peeled and diced.
  • 3 medium Potatoes Cut into bite-sized pieces.
  • 1 large Onion Chopped.
  • 4 cloves Garlic Minced.

Liquids

  • 4 cups Beef Broth Low-sodium recommended.

Seasonings

  • 2 leaves Bay Leaves
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black Pepper Freshly ground, to taste.
  • 2 tablespoons Olive Oil For browning the beef.

Instructions

  • Prepare all ingredients: chop beef, dice vegetables, and mince garlic.
  • Heat olive oil in a large pot over medium-high heat. Sear beef until browned.
  • Remove beef and sauté onions until translucent, then add garlic.
  • Return beef to pot, add vegetables, broth, bay leaves, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  • Adjust seasoning, remove bay leaves, and serve hot.

Notes

This stew can be made ahead of time and tastes even better the next day.
