  • 4 fillets Salmon Fillets Each weighing around 6 ounces.
  • 2 medium Oranges For zest and juice.
  • 2 tablespoons Fresh Thyme Leaves stripped from the stems.
  • 3 cloves Garlic Minced.
  • 2 tablespoons Olive Oil Extra virgin.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black Pepper To taste.

Optional Vegetables

  • 2 cups Chopped Seasonal Vegetables Such as asparagus, bell peppers, or zucchini.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the salmon fillets dry and season both sides with salt and pepper.
  • In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering.
  • Place the salmon fillets skin-side down in the skillet and sear for 3-4 minutes.
  • Zest one orange and juice both oranges, removing seeds.
  • Flip the salmon fillets carefully and cook for an additional 2 minutes.
  • Add minced garlic and fresh thyme to the skillet around the salmon.
  • Pour the orange juice over the salmon fillets.
  • Scatter optional vegetables around the salmon in the skillet.
  • Transfer the skillet to the oven and bake for 10-12 minutes.
  • Remove from the oven and let the salmon rest for a couple of minutes before serving.
  • Sprinkle reserved orange zest over the salmon and serve with roasted vegetables.
