  • 2 medium Zucchini Grated and excess moisture squeezed out.
  • 1 cup All-purpose flour Can substitute with gluten-free flour.
  • 2 large Eggs Acts as a binder.
  • 1/2 cup Green onions Finely chopped.
  • 1 teaspoon Garlic powder For flavor enhancement.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Freshly ground.
  • 1/4 cup Olive oil For frying.

Instructions

  • Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  • In a large mixing bowl, combine the drained zucchini, flour, eggs, green onions, garlic powder, salt, and black pepper. Mix until well combined.
  • Heat a skillet over medium heat and add 2 tablespoons of olive oil. Scoop 1/4 cup of the mixture into the skillet and flatten slightly.
  • Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  • Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with remaining mixture.
  • Serve warm with a side of yogurt or dip.

Notes

For variations, consider adding cheese, fresh herbs, or spices. Serve with dips like tzatziki or hummus.
