Instructions
Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
In a large mixing bowl, combine the drained zucchini, flour, eggs, green onions, garlic powder, salt, and black pepper. Mix until well combined.
Heat a skillet over medium heat and add 2 tablespoons of olive oil. Scoop 1/4 cup of the mixture into the skillet and flatten slightly.
Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with remaining mixture.
Serve warm with a side of yogurt or dip.

For variations, consider adding cheese, fresh herbs, or spices. Serve with dips like tzatziki or hummus.
