Instructions

  • Toast the sesame seeds in a dry skillet over medium heat for 3-5 minutes until golden and fragrant.
  • Remove from heat and let the seeds cool for a few minutes.
  • Transfer cooled seeds to a food processor. Add olive oil, salt, and any optional flavorings.
  • Blend on high speed, scraping down the sides as needed, for 1-2 minutes until crumbly.
  • Slowly add water while blending until smooth and creamy, about 2-3 minutes.
  • Taste and adjust salt or flavorings as necessary, then blend again briefly.
  • Transfer tahini to a clean jar, seal tightly, and refrigerate.

Notes

Store in the refrigerator for up to a month. Stir before use as separation may occur.
