Instructions
Preheat your oven to 350°F (175°C).
In a medium skillet, heat a tablespoon of oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
Once the onion is softened, add the minced garlic and sauté for an additional minute. Set aside to cool slightly.
In a large mixing bowl, combine the ground beef, breadcrumbs, sautéed onion and garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
Transfer the meat mixture to a loaf pan, shaping it into a loaf.
Spread a thin layer of ketchup over the top of the meatloaf.
Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.
Slice the meatloaf carefully and serve hot.
