  • 1 pound Fresh Ginger Root Look for firm, smooth-skinned ginger without any wrinkles or soft spots.
  • 2 cups Granulated Sugar Used for crystallizing the ginger and coating.
  • 1 cup Water For creating the syrup.
  • 1 tablespoon Lemon Juice Optional, enhances flavor.

Instructions

  • Peel the ginger root and slice it into thin strips, about 1/8 inch thick.
  • In a medium-sized saucepan, combine the sliced ginger with 1 cup of water and bring to a gentle boil. Cook for approximately 30 minutes.
  • Strain the ginger slices using a fine-mesh sieve and rinse under cold water.
  • Return the ginger to the saucepan, add 2 cups of sugar and 1 cup of water. Stir until sugar is dissolved and simmer gently for 45 minutes to 1 hour.
  • Once the ginger is translucent and the syrup thickens, remove from heat and cool for 10-15 minutes.
  • Prepare a baking sheet lined with parchment paper and remove ginger pieces from syrup, coating them in granulated sugar.
  • Let the ginger dry at room temperature for 24 hours before storing in an airtight container.

Notes

Store crystallized ginger in an airtight container at room temperature for several weeks.
