2
cups
Granulated Sugar

1
cup
Water
For creating the syrup.
1
tablespoon
Lemon Juice
Optional, enhances flavor.
Instructions
Peel the ginger root and slice it into thin strips, about 1/8 inch thick.
In a medium-sized saucepan, combine the sliced ginger with 1 cup of water and bring to a gentle boil. Cook for approximately 30 minutes.
Strain the ginger slices using a fine-mesh sieve and rinse under cold water.
Return the ginger to the saucepan, add 2 cups of sugar and 1 cup of water. Stir until sugar is dissolved and simmer gently for 45 minutes to 1 hour.
Once the ginger is translucent and the syrup thickens, remove from heat and cool for 10-15 minutes.
Prepare a baking sheet lined with parchment paper and remove ginger pieces from syrup, coating them in granulated sugar.
Let the ginger dry at room temperature for 24 hours before storing in an airtight container.
Notes
Store crystallized ginger in an airtight container at room temperature for several weeks.
