Instructions

  • Preheat your oven to 350°F (175°C).
  • Wash and trim the fresh green beans, cutting them into bite-sized pieces if desired.
  • In a large pot, bring salted water to a boil. Add the green beans and blanch for about 4-5 minutes until bright green and slightly tender. Drain and place in ice water.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and sauté for an additional minute until aromatic.
  • In a mixing bowl, combine cream of mushroom soup and milk until smooth.
  • Add sautéed onions and garlic to the mixture, followed by blanched green beans. Stir until coated.
  • Fold in shredded cheddar cheese, reserving some for topping. Season with salt and pepper.
  • Pour the mixture into a greased 9x13-inch baking dish.
  • Sprinkle reserved cheddar cheese and French fried onions on top.
  • Bake for 25-30 minutes until hot and bubbly, and topping is golden brown.
  • Let cool for a few minutes before serving.
