Ingredients

Potatoes

  • 4 large Russet Potatoes Washed and peeled, cut into strips.

Oil

  • 3 tablespoons Extra Virgin Olive Oil For coating the fries.

Seasoning

  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper Freshly ground.

Toppings

  • 1 cup Crumbled Feta Cheese For topping the fries.

Tzatziki Sauce

  • 1 cup Plain Greek Yogurt Base for tzatziki.
  • 1 small Cucumber Grated and drained.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Fresh Dill Chopped.
  • 1 tablespoon Lemon Juice For flavor.
  • to taste Salt For tzatziki.

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the russet potatoes, then cut them into even strips.
  • Soak the cut potatoes in cold water for at least 30 minutes.
  • Drain the potatoes and pat them dry with a clean kitchen towel.
  • Drizzle the dried potatoes with olive oil, salt, and pepper, and toss to coat.
  • Spread the fries in a single layer on a parchment-lined baking sheet.
  • Bake the fries for about 25-30 minutes, flipping halfway through.
  • While the fries are baking, prepare the tzatziki sauce by mixing yogurt, cucumber, garlic, dill, lemon juice, and salt in a bowl.
  • Once the fries are done, sprinkle crumbled feta cheese on top.
  • Serve the fries hot with tzatziki sauce on the side for dipping.

For extra crispy fries, ensure to soak the potatoes and dry them thoroughly before cooking.
