Instructions

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat until light and fluffy.
  • Add the egg and vanilla flavoring, and beat until well combined.
  • In a separate bowl, whisk together gluten-free flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Fold in the chocolate chips with a spatula.
  • Drop rounded balls of dough onto the prepared baking sheet, leaving space between them.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
