Ingredients

Beans

  • 2 cups White Beans Dried or canned, soaked overnight if dried.

Flavorings

  • 4 cloves Garlic Minced.
  • 1/4 cup Lemon Juice Freshly squeezed.
  • 1/3 cup Olive Oil Extra virgin.
  • 1/4 cup Fresh Herbs Chopped (parsley, basil, or thyme).

Seasonings

  • Salt To taste.
  • Pepper To taste.
  • 1/2 teaspoon Red Pepper Flakes Optional.

Instructions

  • Soak dried beans overnight. Drain and cook in a pot with fresh water until tender, about 1 to 1.5 hours. If using canned beans, rinse and drain.
  • In a mixing bowl, combine minced garlic, lemon juice, and olive oil. Whisk until blended.
  • Add the cooked or canned beans to the marinade and gently fold to coat.
  • Sprinkle in fresh herbs, salt, pepper, and red pepper flakes. Fold gently to combine.
  • Cover and marinate for at least 30 minutes at room temperature or refrigerate for several hours.
  • Stir gently before serving. Adjust seasoning as needed and serve warm or cold.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 2 months.
