Instructions
Rinse the kale under cold water, remove tough stems, and tear into bite-sized pieces. Place in a large mixing bowl.

Add halved cherry tomatoes, diced cucumber, and sliced red onion to the kale.
Crumble feta cheese over the salad.
In a small bowl, whisk together olive oil and lemon juice, then drizzle over the salad.
Season with salt and pepper, then toss gently to combine all ingredients.
Sprinkle sunflower seeds on top and add diced avocado if using. Serve immediately.
