Instructions

  • Rinse the kale under cold water, remove tough stems, and tear into bite-sized pieces. Place in a large mixing bowl.
  • Sprinkle a pinch of salt over the kale and massage the leaves for 2-3 minutes until softened.
  • Add halved cherry tomatoes, diced cucumber, and sliced red onion to the kale.
  • Crumble feta cheese over the salad.
  • In a small bowl, whisk together olive oil and lemon juice, then drizzle over the salad.
  • Season with salt and pepper, then toss gently to combine all ingredients.
  • Sprinkle sunflower seeds on top and add diced avocado if using. Serve immediately.
