Instructions
Wash cucumbers, cherry tomatoes, and parsley under cold running water. Pat dry.
Peel and slice cucumbers into thin rounds. Place in a large mixing bowl.
Halve cherry tomatoes and add to the bowl with cucumbers.
Thinly slice red onion and add to the mixing bowl.
Chop fresh parsley and add to the bowl.
In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
Pour the dressing over the salad ingredients and toss gently to coat.
Season with salt and freshly cracked black pepper to taste.
Let the salad sit for 5 to 10 minutes to allow flavors to meld.
Toss again before serving and enjoy!

This salad can be made ahead of time; just keep the dressing separate until serving.
