Ingredients

  • 2 large Cucumbers Peeled and sliced
  • 1 cup Cherry Tomatoes Halved
  • 0.5 medium Red Onion Thinly sliced
  • 1 handful Fresh Parsley Chopped
  • 3 tablespoons Olive Oil Extra virgin
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Honey
  • to taste Salt
  • to taste Black Pepper Freshly cracked

Instructions

  • Wash cucumbers, cherry tomatoes, and parsley under cold running water. Pat dry.
  • Peel and slice cucumbers into thin rounds. Place in a large mixing bowl.
  • Halve cherry tomatoes and add to the bowl with cucumbers.
  • Thinly slice red onion and add to the mixing bowl.
  • Chop fresh parsley and add to the bowl.
  • In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
  • Pour the dressing over the salad ingredients and toss gently to coat.
  • Season with salt and freshly cracked black pepper to taste.
  • Let the salad sit for 5 to 10 minutes to allow flavors to meld.
  • Toss again before serving and enjoy!

Notes

This salad can be made ahead of time; just keep the dressing separate until serving.
