  • 4 fillets Cod Fillets Each fillet should weigh roughly 6 ounces.
  • 1 cup Unsalted Butter Use cold butter for emulsification.
  • 2 Shallots Finely chopped.
  • 1/2 cup Fresh Orange Juice Juice from 1 large orange.
  • 1 tablespoon Orange Zest Zest from the same orange.
  • to taste Salt Kosher salt preferred.
  • to taste Black Pepper Freshly ground.
  • 1 tablespoon Olive Oil For cooking the cod.

Instructions

  • Gather all ingredients and prepare them for cooking.
  • Heat a large skillet over medium heat and add the olive oil.
  • Place the cod fillets in the skillet and cook for 4-5 minutes until golden brown.
  • Season the uncooked side with salt and pepper.
  • Flip the cod fillets and cook for an additional 3-4 minutes until opaque.
  • Transfer the fillets to a plate and cover with foil to keep warm.
  • In the same skillet, reduce heat to low and sauté chopped shallots for 2 minutes.
  • Pour in the orange juice and scrape the bottom of the pan.
  • Simmer the orange juice for 3-4 minutes until reduced slightly.
  • Whisk in the cold butter, one tablespoon at a time, until emulsified.
  • Stir in the orange zest and adjust seasoning with salt and pepper.
  • Return the cod fillets to the skillet and spoon the sauce over them.
  • Plate the cod and drizzle additional sauce over the top before serving.
