Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Stir in sliced bell peppers and sauté for 5-7 minutes until softened.
  • Sprinkle in Cajun seasoning and stir to coat the vegetables evenly.
  • Add rinsed rice and stir to combine with the vegetable mixture.
  • Pour in chicken broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for 15 minutes.
  • After 15 minutes, add shrimp and cover again. Cook for an additional 5-7 minutes until shrimp are pink and cooked through.
  • Stir in lemon juice and parsley. Let rest for a couple of minutes before serving.
  • Fluff the rice with a fork and serve hot.
