Prepare your ingredients, ensuring you have 4 cups of cooked jasmine rice.
Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil.
Crack 2 large eggs into the pan, scrambling them gently until just set, then transfer to a plate.
Add 1 cup of mixed vegetables to the skillet and stir-fry for 2-3 minutes until tender.
Add 3 tablespoons of Thai red curry paste, stirring to combine with the vegetables.
Add the cooked jasmine rice, breaking up clumps and mixing well with the curry paste.
Pour in 2 tablespoons of soy sauce, stirring continuously to coat the rice.
Return the scrambled eggs to the skillet, folding them into the rice mixture.
Add 1/2 cup of sliced green onions and mix until well combined and heated through.
