Instructions

  • Add 3 tablespoons of Thai red curry paste, stirring to combine with the vegetables.
  • Add the cooked jasmine rice, breaking up clumps and mixing well with the curry paste.
  • Pour in 2 tablespoons of soy sauce, stirring continuously to coat the rice.
  • Return the scrambled eggs to the skillet, folding them into the rice mixture.
  • Add 1/2 cup of sliced green onions and mix until well combined and heated through.
