Instructions
1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and rinse under cold water.
2. Prepare vegetables: dice bell peppers and cucumber. If using dry sundried tomatoes, rehydrate in warm water for 15 minutes, then chop.
3. In a large mixing bowl, combine cooked pasta, sundried tomatoes, bell peppers, and cucumber. Toss gently.
4. Drizzle pesto over the mixture and fold gently to coat. Add olive oil if needed.
5. Add chopped basil and grated Parmesan cheese, folding them in gently. Season with salt and pepper to taste.
6. Let the salad sit for 15-20 minutes at room temperature or refrigerate for at least an hour before serving.
