Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until fully cooked. Fluff and set aside.
  • Heat a large skillet over medium heat. Add oil or butter, then sauté the onion for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional minute.
  • Add diced bell peppers and cook for 5 minutes until tender.
  • Stir in shrimp and cook for 3-5 minutes until pink and opaque. Remove from heat.
  • In a mixing bowl, combine cooked rice, cream of mushroom soup, shrimp, and sautéed vegetables. Mix well.
  • Season with salt, pepper, and herbs. Transfer to a greased baking dish.
  • Top with cheddar cheese and breadcrumbs mixed with melted butter.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let cool for 5 minutes before serving.
