Instructions
Preheat your oven to 350°F (175°C).
In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until fully cooked. Fluff and set aside.
Heat a large skillet over medium heat. Add oil or butter, then sauté the onion for 3-4 minutes until translucent.
Add minced garlic and cook for an additional minute.
Add diced bell peppers and cook for 5 minutes until tender.
Stir in shrimp and cook for 3-5 minutes until pink and opaque. Remove from heat.

Top with cheddar cheese and breadcrumbs mixed with melted butter.
