Instructions
In a medium mixing bowl, combine crushed graham crackers and granulated sugar. Mix well.
Pour in melted unsalted butter and stir until the mixture resembles wet sand.
Press the crumb mixture into the bottom of muffin tin lined with paper liners.
In a large mixing bowl, beat softened cream cheese until smooth.
Gradually add powdered sugar and vanilla bean paste, mixing until fluffy.
In a separate bowl, whip heavy whipping cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture.
Spoon cheesecake filling into each prepared crust and smooth the surface.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Remove from refrigerator and peel away paper liners.
Top with fresh berries, chocolate shavings, or caramel sauce.
Serve chilled and enjoy!
