Instructions

  • Begin by preparing your ingredients. Wash and cut the cauliflower into small florets. Steam or cook the cauliflower until tender, about 5-7 minutes. Drain any excess water and allow it to cool slightly.
  • Using a food processor, pulse the steamed cauliflower until it resembles rice-like grains. Be careful not to over-process.
  • In a mixing bowl, combine the processed cauliflower with the harissa paste and honey. Mix thoroughly and adjust seasoning with salt if needed. Add chopped coriander.
  • In a separate bowl, combine the whole wheat flour and salt. Gradually add warm water, mixing until the dough comes together. Knead for about 5-7 minutes until smooth and elastic. Cover and let rest for 20-30 minutes.
  • Once rested, divide the dough into equal-sized balls. Flatten one ball slightly with your palms.
  • On a floured surface, roll out the dough into a circle, about 6 inches in diameter and 1/8 inch thick.
  • Place a spoonful of the filling in the center, gather the edges, and seal tightly. Flatten the stuffed dough ball to create a disc shape.
  • Roll out the stuffed dough gently again, ensuring the filling stays intact. Repeat for remaining dough balls.
  • Heat a skillet over medium-high heat and add a tablespoon of oil. Place the rolled paratha onto the skillet and cook for 2-3 minutes until golden brown. Flip and drizzle more oil on the cooked side.
  • Continue cooking the second side for an additional 2-3 minutes until crispy and golden. Keep cooked parathas warm while finishing the rest.
  • Serve hot with yogurt, pickles, or chutney. Enjoy!

Notes

These parathas can be customized with different herbs or spices. They are also suitable for meal prep and can be stored in the refrigerator for up to 3 days.
