Instructions
Preheat your oven to 350°F (175°C).
Grease a 9x9 inch baking pan or line it with parchment paper.
In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Whisk until smooth.
Add eggs one at a time, whisking well after each addition.
Stir in grated zucchini and vanilla extract until fully incorporated.
In a separate bowl, sift together flour, cocoa powder, and salt.
Gradually fold the dry mixture into the wet ingredients until just combined.
If desired, fold in walnuts or chocolate chips.
Pour the batter into the prepared baking pan and smooth the top.
Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting.
