Instructions
Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Cook the jumbo pasta shells until al dente, about 9-11 minutes.
In a skillet, heat olive oil over medium heat. Sauté minced garlic for about 30 seconds.
Add fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Remove from heat.
In a mixing bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, Italian seasoning, salt, and pepper.
Drain the pasta shells and rinse under cold water. Lay them on a towel to dry.
Spread a cup of marinara sauce on the bottom of a baking dish.
Fill each shell with the cheese and spinach mixture and place them in the baking dish.
Pour the remaining marinara sauce over the filled shells and sprinkle with remaining mozzarella.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
Let cool for 5-10 minutes before serving. Garnish with fresh herbs if desired.
Notes
For variations, consider adding sautéed vegetables, proteins, or different cheeses to the filling.
