Instructions
Preheat your oven to 325°F (160°C).
Combine graham cracker crumbs, granulated sugar, and melted butter in a mixing bowl. Stir until it resembles wet sand.
Press the mixture into the bottom of a 9-inch springform pan.
Bake the crust for 8-10 minutes until lightly golden. Let it cool.
In a mixing bowl, beat cream cheese until smooth.
Add granulated sugar and sour cream, beat until smooth.
Add eggs one at a time, mixing well after each addition.
Pour the batter over the cooled crust and spread evenly.
Bake for 50-60 minutes until edges are set.
Turn off the oven and crack the door, let cool for 1 hour.
Cool to room temperature, then refrigerate for at least 4 hours.
Top with sliced strawberries or drizzle with strawberry sauce before serving.
Slice using a hot knife for clean cuts and serve chilled.
