Instructions
Preheat your oven to 325°F (160°C).
Prepare a muffin tin by lining it with cupcake liners.
In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
Evenly distribute the graham cracker mixture into the bottom of each cupcake liner and press down firmly.
Bake the crusts for about 8-10 minutes or until lightly golden.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the peanut butter and granulated sugar to the cream cheese and beat until well combined.
Whisk the eggs in a separate bowl and gradually add to the cream cheese mixture, mixing on low speed.
Add the vanilla bean paste and a pinch of salt, mixing until combined.
Melt the chocolate chips and fold into the cheesecake mixture.
Spoon the cheesecake filling evenly over each crust, filling them about 3/4 full.
Bake for an additional 15-18 minutes or until the centers are set but still slightly jiggly.
Let the cheesecakes cool in the oven for about 30 minutes.
Transfer to the refrigerator and chill for at least 4 hours or overnight.
Carefully peel away the cupcake liners and serve with desired toppings.
