Ingredients

  • 1 cup Semi-sweet Chocolate Chips For melting and mixing.
  • 1 teaspoon Vanilla Bean Paste
  • 1 pinch Salt To balance sweetness.

Instructions

  • Preheat your oven to 325°F (160°C).
  • Prepare a muffin tin by lining it with cupcake liners.
  • In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Evenly distribute the graham cracker mixture into the bottom of each cupcake liner and press down firmly.
  • Bake the crusts for about 8-10 minutes or until lightly golden.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the peanut butter and granulated sugar to the cream cheese and beat until well combined.
  • Whisk the eggs in a separate bowl and gradually add to the cream cheese mixture, mixing on low speed.
  • Add the vanilla bean paste and a pinch of salt, mixing until combined.
  • Melt the chocolate chips and fold into the cheesecake mixture.
  • Spoon the cheesecake filling evenly over each crust, filling them about 3/4 full.
  • Bake for an additional 15-18 minutes or until the centers are set but still slightly jiggly.
  • Let the cheesecakes cool in the oven for about 30 minutes.
  • Transfer to the refrigerator and chill for at least 4 hours or overnight.
  • Carefully peel away the cupcake liners and serve with desired toppings.
