Ingredients

Meat

  • 1 pound Ground Chicken or Beef Choose lean meat for a healthier option.

Vegetables

  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 1 cup Carrots Diced.

Canned Ingredients

  • 1 can Diced Tomatoes 14.5 ounces.
  • 1 can Tomato Sauce 15 ounces.

Broth

  • 4 cups Chicken or Vegetable Broth Opt for low-sodium.

Pasta

  • 8 ounces Lasagna Noodles Broken into pieces.

Seasonings

  • 2 teaspoons Italian Seasoning

To Taste

  • Salt To taste.
  • Pepper To taste.

Cheese

  • 1 cup Shredded Mozzarella Cheese For topping.

Garnish

  • 1 cup Fresh Basil Chopped, for garnish.

Instructions

  • 1. Heat a large pot over medium heat. Add the ground chicken or beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat.
  • 2. Add the chopped onion to the pot. Cook until translucent, around 3-4 minutes.
  • 3. Add minced garlic and diced carrots. Cook for an additional 2-3 minutes.
  • 4. Pour in the diced tomatoes and tomato sauce, mixing well.
  • 5. Add the broth and bring to a gentle boil.
  • 6. Add the broken lasagna noodles and cook for 10-12 minutes until al dente.
  • 7. Season with Italian seasoning, salt, and pepper. Adjust to taste.
  • 8. Stir in the shredded mozzarella cheese until melted. Serve hot, garnished with fresh basil.

Notes

This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
