Instructions

  • In a large mixing bowl, combine olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Whisk until well blended.
  • Cut the chicken thighs into 1-inch pieces and add to the marinade, ensuring they are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes.
  • Prepare the vegetables by cutting bell peppers, onion, and zucchini as instructed.
  • Assemble the kebabs by threading marinated chicken and vegetables onto skewers.
  • Preheat the grill to medium-high or the oven to 400°F (200°C). Cook the kebabs for 15-20 minutes, turning halfway through.
