Instructions
1. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until well blended.
2. Add chicken to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 30 minutes.
3. Prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, and salt in a separate bowl. Chill in the refrigerator.
4. Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side until cooked through.
5. Warm pita bread on the grill for 1-2 minutes on each side.
6. Let grilled chicken rest for a few minutes, then chop into bite-sized pieces.
7. Assemble gyros by layering grilled chicken, tomatoes, red onion, and tzatziki in pita bread.
8. Wrap pita around fillings and serve immediately.

Consider adding grilled vegetables or different proteins for variations. Serve with a Greek salad or roasted potatoes.
