Ingredients

Chicken Breast

  • 1.5 pounds boneless, skinless chicken breast Cut into strips or cubes for even cooking.

Marinade

  • 3 tablespoons extra virgin olive oil Base for the marinade.
  • 2 tablespoons lemon juice Freshly squeezed from one medium lemon.
  • 3-4 cloves minced garlic Adds aromatic flavor.

Tzatziki Sauce

  • 1 cup plain Greek yogurt For the tzatziki sauce.
  • 1 medium cucumber Grated and drained for tzatziki.
  • 2 tablespoons fresh dill Chopped finely for tzatziki.

Serving

  • 4 pieces pita bread Warm for serving.
  • 2 medium ripe tomatoes Diced for topping.
  • 1 small red onion Thinly sliced for topping.
  • salt and pepper To taste.

Instructions

  • 1. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until well blended.
  • 2. Add chicken to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 30 minutes.
  • 3. Prepare tzatziki by mixing Greek yogurt, grated cucumber, dill, and salt in a separate bowl. Chill in the refrigerator.
  • 4. Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side until cooked through.
  • 5. Warm pita bread on the grill for 1-2 minutes on each side.
  • 6. Let grilled chicken rest for a few minutes, then chop into bite-sized pieces.
  • 7. Assemble gyros by layering grilled chicken, tomatoes, red onion, and tzatziki in pita bread.
  • 8. Wrap pita around fillings and serve immediately.

Notes

Consider adding grilled vegetables or different proteins for variations. Serve with a Greek salad or roasted potatoes.
